Christmas is only 5 days away (!), and I'm guessing that most of you already have holiday gifts determined and purchased...right?!?  This post is probably a bit late, but I thought it might be helpful to those of you still looking for last minute gifts for friends, family and co-workers. Brian and I have given homemade gifts out for the last few years, and always enjoy the pleased responses we receive in return.  In a time when spending significant amounts of money is difficult for most, putting personal effort into gifts rather than cash is a nice alternative.  I've compiled a few ideas for you to choose from...enjoy!

Homemade Jam

Homemade jam can be made with fresh and frozen fruit.  Be sure to use a proper method of preservation if you plan to give the gifts un-refrigerated.  If you'd rather not tackle the canning process, tell recipients to keep their jam refrigerated for up to 4 weeks. blackberry peach jam

Homemade Hot Cocoa Mix and Marshmallows

Homemade marshmallows are nothing like their store-bought cousins.  So light and fluffy, they truly melt in your mouth (or your hot cocoa).  For a little twist, add some peppermint extract in place of vanilla.  If you don't have vanilla sugar for the cocoa mix (it takes about 2 weeks to make your own) just substitute regular sugar. hot cocoa mix marshmallows

a distant memory

Last week, the lovely Whitney of Whitney in Chicago made granola.  I commented on her blog that it looked delicious, to which she responded "let me send you some!".  Yes please!  It arrived at the end of last week and was enjoyed as cereal with soy milk, on top of greek yogurt and, most commonly, by the handful while staring into my pantry trying to decide what to make for dinner.  That was my favorite way to consume it.  It is chock-full of pistachios and cranberries, along with almonds and coconut flakes.  Delicious.  Thank you Whitney! granola-6 Granola is one of those grocery store items that I hate to buy.  It is somewhat expensive and every time I pick up a box or scoop some into a bulk bag I think to myself  "I should just make my own!"  My good friend Beth sent Brian (my hubb) and I a batch for Christmas which was consumed quickly and similarly to Whitney's.  Since then I've had granola on my to-make list, and the arrival of Whitney's package secured its spot at the very top of that list. granola-1 As I've written before, its spring cleaning time.  I've been working through the containers of dried fruits and nuts in my pantry, cleaning out items that have been stored for far too many months to make room for new purchases.  Granola seemed like the perfect way to use up the small quantities of miscellaneous dried goods that I had left.  I dug around and found currants, cranberries, apples and pineapple along with walnuts, pumpkin seeds and a small amount of finely shredded unsweetened coconutgranola-2 As I gathered my ingredients I eagerly pulled up Whitney's recipe to make sure I had what I needed for the granola base.  One item on the list stirred a recent memory of a white, flour-like substance that I had been storing in a small gladware container.  It had been in the pantry for months and I had been trying to remember what it was.  I knew that I had opened a box of something, used a good portion of it and stored the remainder in this container for future use.  The only problem?  I hadn't labeled the container, and I had no idea what the substance was.  Just last week, during my initial cleaning out of the pantry I had stumbled upon it and, exasperated that I coudn't remember what it was, I threw it out.  Now I remembered.  Powdered milk.  And, of course, Whitney's recipe called for it.  And I, the non-labeler, had none. granola-3 I quickly decided that powdered milk must not be an absolutely necessary ingredient in granola.  My reasoning?  Everybody loves granola, including Vegans. And a granola that contained powdered milk would not be vegan so powdered milk must not be necessary.  This means that honey must not be absolutely necessary either but I chose to keep it in, because I do love honey.   For my kitchen sink granola (or should I say pantry shelf granola?) I decided to hop over to The Kitchen Sink, remembering that I had seen Kristin feature granola a few times on her blog.  And her recipe didn't require powdered milk.  Ding ding!   I modified the mix to include the items I had on hand, but the base recipe is the same.  And it is delicious.  Store-bought granola?  A distant memory. granola-4

Mixed Fruit Granola

recipe modified from the kitchen sink Ingredients:
  • 3-1/2 cups rolled oats
  • 1/2 cup unsweetened coconut
  • 1/2 cup pumpkin seeds
  • 1/2 cup walnuts, chopped
  • 2 tsp cinnamon
  • 1/4 cup turbinado sugar
  • 1/4 cup canola oil
  • 2 tbsp honey
  • 1 tbsp pure maple syrup
  • 2 tsp pure vanilla extract
  • 2 cups mixed dried fruit (I used cranberries, currants, apples and pineapple)
Method:
  1. Preheat the oven to 375*.  Line a rimmed baking sheet with aluminum foil.  In a large bowl, combine all of the ingredients except the dried fruit.  Stir well to incorporate.
  2. Spread the mixture on the prepared baking sheet in an even layer.  Bake for 20-30 minutes, depending on how golden you like it (I baked mine for 20 minutes).  Stir every 10 minutes.
  3. Remove the granola from the oven and cool completely, in its pan on a wire rack.  Once the granola is cool mix in the dried fruit.

packin' it up

Good evening!  I had a very long day again today, but it started with a RUN!  That's right, I was in bed last night by 11:10pm and up at 6:05am...whippee! My hubb and I ran 3 miles.  It felt great to be out stretching my legs as the sun was rising and I got a little thrill each time today when I remembered that I had ALREADY worked out.  Love that!  I really need to make this whole morning run thing part of my regular routine...  Its especially helpful during these busy weeks at the office when the last thing I want to do at the end of the day is work out. Exercise:  3-mile run [-318 cal] So I knew that today would be a long day, and I packed up plenty of food to sustain me through breakfast, lunch and dinner.  It wound up being an intuitive eating day, I just snacked my way through whenever I found a spare moment. Breakfast:  1/2 cup Fage 0% with 1/2 banana, 1/4 cup TJ's pumpkin spice granola and 2 chopped figs. [256 cal] 090211-b1 For lunch I made my hubb a couple of mexi-wraps because we were out of lunch meat (his typical packed lunch of choice).  They looked SO good that I decided to make one for myself too. Lunch:  mexi-wrap made with whole wheat tortilla, spinach, salsa, black beans, frozen corn, black olives, red bell pepper, 1 tbsp monterrey jack cheese and green onions [246 cal] 090211-l1 090211-l2 Snacks:  I packed grapes and a pear, but wound up saving my pear for later.  I did go on a walk to the coffee shop with my hubb and gave in to a gluten-free chocolate biscotti - it was just one of those kind of days. [grapes = 110 cal, biscotti = 280 (a went with the highest calorie count I found on myfooddiary...it was a big biscotti)] 090211-s1 For dinner I packed myself some leftover lentil chili on top of a bed of spinach.  When I heated the dish it made the spinach all wilty...it was so good in the chili!  So good that I think I'll consider actually adding spinach directly to the chili next time I make it. Dinner:  leftover chili on spinach [365 cal] 090211-d5 When I finally got home I was craving some dessert  My pear made a reappearance...in a snackie dessert bowl! Dessert:  6oz Oikos honey-flavored yogurt, 1 sliced pear and 3 lemon snaps, crumbled [341 cal] 090211-d1 See what I mean?  It was such a snackie, intuitive day full of little 250 cal - 350 cal meals.  I actually really liked it, and my numbers aren't too bad either. Daily Totals:
  • calories consumed = 1598
  • calories expelled = 318
  • net calories = 1280
Alright, I'm going to go catch up with my hubb and shoot for an 11pm bed time again.  Maybe I'll do some yoga in the morning, since I missed tonight's class again!!!  Darn project deadlines.  I'm sorry I haven't answered any comments yesterday or today...I'll get there soon, promise.  I miss reading all of your blogs, too!  Hopefully I can catch up soon.  Oh!  I did catch in my reader that Meghann is having a contest to give away an awesome sports bra!!!  Be sure to check it out, or not, so that I have a better chance of winning!  :) Can I win if I'm family?!? I was a little slow this morning, both mentally and physically.  The snooze button on my alarm was pressed for a full 45 minutes before I finally crawled out of bed.  I knew the weather was supposed to be cold and dreary today so I'll blame my lack of motivation on that. When I puttered out to the kitchen to work on prepping today's eats I had nary a clue as to what I would fix.  As I shuffled things around on the top shelf of my fridge, I accidentally knocked a small container of Fage to the floor.  After picking it up and discovering the crack that had formed in the bottom of the container, I realized that breakfast was solved. Breakfast:  one 6oz cup of 0% Fage, 1/2  a pink lady apple, 1/4 cup of homemade granola from my lovely friend Beth and a drizzle of cranberry ketchup. 090106-b1 Perfect combination.  I truly loved this breakfast.  Have I mentioned that the CK is good on EVERYTHING? I know you're probably sick of reading about it, but I've got just over one jar left to finish up before it goes bad so I'll happily continue to experiment over the next week.  In fact, this morning I made my hubb a brie, apple, spinach and cranberry ketchup sandwich on honey wheat bread.  He LOVED it, as did I when he brought over a bite for me to taste. After solving my breakfast and the hubb's lunch, I was at a bit of a loss thinking about what I wanted for lunch.  I thought about more meatball soup, but decided I should give it a rest and add some variety back into my meals and my blog.  There are a couple of sweet potatoes on the counter that I thought about baking, but didn't have time.  Same with the spaghetti squash.  I finally settled on a bag of dried french lentils in the pantry that I've been meaning to make a salad with for quite some time.  It seemed that I had enough time to quickly simmer them soft, but I wasn't altogether sure since it had been awhile since I'd made them.   I brought 1 cup of french lentils to a boil in 2 cups of chicken broth, reduced the heat and simmered for 40 minutes, 10 minutes longer than I had anticipated which resulted in a very rushed salad prep.  They are still slightly crunchy, which I like.  I'm not a big fan of lentils when they turn to mush. 090106-l1 Tossed with chopped bell pepper, cucumber, olive oil, balsamic vinegar and creole mustard, this simple salad turned out pretty well.  I'll be experimenting more though because I've had many better lentil salads at restaurants around town. Lunch:  Lentil Salad with 1/2 a whole wheat pita and a pear.  I meant to sprinkle some crumbled feta on top of the salad, but in my rush I forgot.  Maybe tomorrow. 090106-l2 For snacks I brought:  2 clementines and an Iced Gingerbread Clif Bar, I only ate one of the clems. 090106-s1 This was my first experience with any of the holiday-flavored Clif Bars.  I know, I'm way behind.  I wasn't sure what to expect as I've read many mixed reviews about them, so I was very pleasantly surprised when I nibbled on the bar a bit before lunch.  It was quite tasty!  I saved the rest for an afternoon snack and enjoyed it immensely.  Looks like I'm in for a hunt around town before they are all gone for another year.  Now if I could only remember where I found them... I also had two more dark chocolate covered potato chips.  Yes, I said potato chips.  I don't know why they don't show the dark chocolate option on the website, but I definitely prefer dark to milk chocolate these days.  I wish the chocolate was a little thinner so you could taste a bit more of the salted potato chip, but they are delicious all the same. During my lunch break I perused the last couple of days of the NY Times Dining + Wine section on the web.  I came across this recipe and couldn't stop thinking about it.  I'll blame it on the rain again. So, I hopped in the car with my hubb for a couple of late-lunchtime errands and purchased 4 chicken thighs, some dried figs, honey and lemons.  Also, some kale.  I've been craving greens since I couldn't find them for our New Years Day lucky dinner. Dinner:  Broiled Chicken with Honey Fig Sauce, sautéed kale and roasted garlic rice. 090106-d4 I discovered a new love for dried figs. 090106-d5 They are perfectly sweet and soft, and the seeds provide a wonderfully satisfying crunch.  Love. 090106-d9 The chicken is broiled in the oven until the outside is delicately crispy and the inside still moist.  The figs are simmered with honey, white wine and spices until a thick glaze forms, then drizzled over the chicken.  Paired with one of my longtime favorites, sautéed kale, this meal was a sure winner. 090106-d2 We sautéed the kale in olive oil with some garlic, salt and pepper until the leaves wilted slightly and turned bright green. 090106-d6 Before serving, we squeezed a bit of lemon juice across the kale.  Perfect. 090106-d8 The hubb and I were pretty happy with the results.  If we make the chicken recipe again we will make a few changes...
  • Use ground coriander instead of whole, and cut amount accordingly
  • Omit lemon juice from fig glaze
  • Lessen honey, perhaps substitute a bit more wine?  :)
At any rate, I'm a very happy girl after eating this simple gourmet meal.  Especially since we paired it with one of my new favorite wines, a local white that we used in the glaze as well. 090106-d7 And now, its bedtime after another long post.  I hope you've all had a pleasant day, and that tomorrow brings better weather for those of us that have been plagued with rain and cold for the last 24 hours. mexican meatball soup + kashi coupons!

I've had such a wonderful, relaxing weekend!  It was just what I needed after a week of traveling and holidays.  I hope that you all feel refreshed and ready to get back to work / school! We had a fantastic time with our friends last night.  Dinner was amazing, roasted chicken breast with onions, garlic and carrots, a side of steamed broccoli and savory grits.  All accompanied by two glasses of cabernet and finished with a medley of cheesecakes that we all sampled.  I was so disappointed that in my rush to get out of our house yesterday I forgot to grab my camera, so I have no evidence of our fabulous eats.  After dinner we just hung out and chatted for a few hours, but had a little break in the middle to play Rockband!!!  So so so fun!  :)  I'm REALLY disappointed that I don't have pictures of that! I was awakened early this morning by one of our pups, and after dealing with her was unable to get back to sleep.  So I got up and made myself a pre-breakfast snack (the hubb had big plans for an egg breakfast and I didn't want to ruin it for him). Snack:  1 cornmeal muffin spread with cranberry "ketchup", 1 clementine and a cup of green tea. 090104-b3 After being up for a couple of hours it became clear that the hubb still wasn't ready to roll out of bed so I decided to go ahead and have breakfast without him. Breakfast:  A 6oz cup of 0% Fage topped with 1/4 cup TJ's pumpkin spice granola and a sliced banana. 090104-b2 Ahhhhhh...Greek Yogurt, how I missed thee.  I still prefer Oikos because it is organic, but until they work out their manufacturing problem and get it back on my Whole Food's shelves the Fage will suit me just fine.  Plus...its cheaper!  :) Sadly, my hubb emerged from the bedroom just after I finished my breakfast.  I snagged a cup of coffee and a piece of his bacon while sitting with him through his meal. 090104-b1 At lunchtime I went to my favorite 75-minute Vinyasa Yoga class at Studio 206.  It had been three weeks since I'd been and it felt great to be back.  Man oh man, Hilary kicked my bootie!  It was a wonderful, intense class that had me drenched by the end.  I was worried that I would be too sore from my run yesterday but the yoga really helped to loosen me up.  I love the combination of running and yoga and what it does for me both mentally and physically. My hubb picked me up at 2pm and I was ravenous so I helped him finish the french fries he'd picked up while running errands.  Once home I made myself a quick, late lunch before heading out into the yard to plant some bulbs. Lunch:  1/2 an almond butter and sour cherry preserves sandwich on whole wheat bread and a sliced pear. 090104-l1 I planted 150 spring bulbs in hard Virginia clay for 2+ hours this afternoon.  I really hope that they come up, they should have gone in the ground a month ago but I just never got around to planting them. The bulbs I planted two years ago are already peaking up above the mulch, so we'll see what happens with my newbies.  The yard work was another workout in itself...2+ hours digging in hard Virginia clay will leave you t.i.r.e.d. Snack:  I was starving again when I came in just before dark (its been such a snack-filled day!) so I grabbed this Kashi Cereal Bar sample I got in the mail the other day. 090104-s1 I've seen these on the my grocery store's shelves but they are kinda pricey so I haven't picked any up yet. It was pretty good...reminded me of a Fig Newton or Nutrigrain bar.  The blackberry filling was quite tasty, and the texture of the bar was nice and soft. 090104-s2 090104-s3 It only contains 110 calories, but just 2g of protein so I know it wouldn't stick with me long for breakfast.  But as an afternoon snack I think it could be very satisfying.   Along with the sample I received a stack of coupons that I'm supposed to share with friends... Would anybody like a couple of Kashi Cereal Bar $2.00 off coupons?  I can send two coupons to two separate people. For dinner tonight the hubb and I made Mexican Meatball Soup.  I first saw this recipe on Kristin's blog, The Kitchen Sink.  If you haven't checked out her blog yet you really should.  She makes beautiful meals and baked goods and has absolutely gorgeous photography. 090104-d7 The recipe is originally from Bon Appetit.  Kristin made a few changes, and I made a few more.  This soup is delicious and hearty.  The hubb and I enjoyed it VERY much.  There is just one change that I will make the next time this meal meets our table and I've indicated it below.  Warning:  This soup requires a LARGE pot.  I started it in my standard soup pot and had to transfer everything to a large stock pot when the meatballs went in to prevent it from overflowing.   Mexican Meatball Soup inspired by The Kitchen Sink, originally from Bon Appetit Ingredients:
  • 2 tablespoons olive oil 
  • 1-1/2 medium onions, chopped, divided
  • 4 garlic cloves, minced, divided
  • 2 small bay leaves 
  • 2 quarts beef broth 
  • 1 quart chicken broth 
  • 1 28-ounce can diced tomatoes in juice 
  • 1/2 cup chunky tomato salsa (medium-hot) [next time we will omit the salsa and instead spice the soup up with some ancho chili powder, to taste]
  • 1/2 cup chopped fresh cilantro, divided
  • 1 pound lean ground beef 
  • 1 pound ground turkey
  • 8 tablespoons yellow cornmeal 
  • 1/4 cup + 2 tbsp buttermilk 
  • 1 large egg 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon ground black pepper 
  • 1/2 teaspoon ground cumin 
  • 1/2 cup long-grain brown rice
Method:
  1. Start the brown rice on the stovetop.  Follow directions on package and let cook for 20 minutes, then remove from heat and set aside.
  2. Heat oil on medium heat in LARGE pot.  Add one of the chopped onions, 2 garlic cloves and bay leaves; sauté 5 minutes.
  3. Add broths, tomatoes with juices, salsa [or ancho chili powder] and 1/4 cup cilantro; bring to boil. Cover and simmer 15 minutes. 
  4. Meanwhile, combine ground beef, ground sausage, cornmeal, buttermilk, egg, salt, pepper, cumin, then remaining 1/2 onion, 2 garlic cloves and 1/4 cup cilantro in medium bowl. Mix well.
  5. Shape meat mixture by generous tablespoonfuls into 1 to 1-1/4 inch balls. 
  6. Add rice and meatballs to soup and bring to boil, stirring occasionally. Reduce heat, cover and simmer until rice and meatballs are tender, stirring occasionally, about 20 minutes. Season to taste with salt and pepper.
broth simmering broth simmering meatballs forming meatballs forming 090104-d2 We used more meat than the original recipe called for so we of course had a few extra meatballs.  The hubb took care of these by pan-frying them in a little olive oil. 090104-d4 Dinner:  A bowl of Mexican Meatball Soup with 7 meatballs, a side of roasted veggies (carrot, brussels and broccoli), two additional pan-fried meatballs and a cornmeal muffin. 090104-d5 The soup is soooooooo filling.  I am still completely stuffed and oh so happy.  :) 090104-d6 Whew!  That was a long post.  I was planning to bake tonight but don't know if I have it in me.  The bathtub and a book may be calling my name instead... rainy day = comfort food

What a dreary day we've had.  I tried to stay inside as much as possible but had to run a couple of errands at lunch time...yuck.  I did come home to a fabulous surprise in my mailbox though...my BSI Prize Trail Mix from Melissa!!! 081211-trail-mix 081211-trail-mix-2 Melissa had the great idea of giving the winner of BSI: Sweet Potatoes a custom-made trail mix...she sent me a list of mixin's to choose from and this is what I decided on:
  • PB-filled pretzels
  • chocolate-covered pretzels
  • almonds
  • cashews
  • caramel bits
  • yogurt-covered raisins
  • dried cranberries
  • chocolate-covered banana chips
  • dried raspberries
  • raisins
It is soooooooooo good!  Thanks Melissa!!!  :)  I had a big handful as soon as I opened the box!!! I had high hopes for another wonderful run this evening but just didn't feel like going out in the nasty weather.  So instead I pulled out my favorite power yoga dvd...not the same as going to class but I went with it.  50 minutes later I was a bendy, stretchy, happy girl...I do love my yoga.  :) Backtrack a little to my day's eats...another post full of comfort food.  What is it about winter-time and the need for warm, filling meals...do all of you lucky Floridians with your 80* winters have the same cravings? I am so-in-love with the TJ's Pumpkin Spice Granola...I was craving it as soon as I got up this morning and thought it was a perfect opportunity to test out the new Siggi's yogurt that Whole Foods gave me as a consolation prize for eliminating my Oikos from their shelves. Breakfast:  One 6oz container of Siggi's Icelandic Skyr, plain, with 1/2 cup TJ's Pumpkin Spice Granola and one sliced banana. 081211-b1 081211-b2 081211-b3 I must say...I am VERY impressed with the Siggi's.  It is very thick but oh so creamy...Julz was right when she commented on my post awhile back that Skyr is like Greek yogurt on steroids!  I LOVED it...too bad it is WAY out of my price range.  $2.69 for 6oz?!?!?!?  I don't think so. Morning Snack:  3 ginger snaps while knitting...is there anything better on a rainy, cold day?!?  I went home around noon to let the pups out and realized that my lunch was actually at work (I didn't anticipate being able to leave the office today).  So, I decided to actually take my full lunch hour and just hang out on the couch for 30 minutes and work on a Christmas present...I was happy and so were the pups.  :) 081211-s2 Lunch:  Leftover Chicken Veggie Soup and a handful of Kashi crackers (I actually took these photos this morning before going to work...poured the soup out of its gladware into the nice bowl, then back into the gladware after the picture.  Yes, I'm becoming that obsessed with my food photography...). 081211-l1 081211-l21 Afternoon Snack:  Another glorious pear. 081211-s1 Dinner:  Homemade Veggie Pizza!  Woohoo!  We loaded a TJ's whole wheat pizza crust with:
  • TJ's pizza sauce
  • fresh spinach
  • onion
  • yellow bell pepper
  • broccoli
  • black olives
  • 1/3 cup part-skim mozzarella on my 1/2, LOTS of cheese on the hubb's 1/2
081211-d1 081211-d2 081211-d3 Mmmmmm...yum.  The crust needed a little longer in the oven, we typically bake it for 5-7 minutes before topping it but the TJ's instructions didn't say to do that so we stuck it in the oven raw with toppings.  It was still a little doughy, but yummy all the same.  :)  I had another piece 1/2 the size of the piece above...which would mean about 3 of 8 slices of a 12" pizza. Dessert:  A small cup of eggnog with a sprinkling of cinnamon on top...my holiday guilty pleasure! 081211-d5 I hope you all have a glorious night and Happy Friday!!!
